Copperhead Jack’s Brings New Flavor to Island University
CORPUS CHRISTI, Texas – A new addition to the Island University’s Cove food court is making meals on the Island tastier than ever as part of a new series of renovations and expansions taking place this academic year. Copperhead Jack’s, a southwest eatery with customizable salads, burritos, and bowls opened with a ribbon cutting on Oct. 8 in the University Center Cove. Showcasing the flavors and flair of South Texas, the restaurant was originally designed by the Chartwells team in College Station specifically for the A&M community.
“Copperhead Jack’s first opened at Texas A&M in fall 2018, and has since become a campus favorite,” Elizabeth Alford, Chartwells Marketing Manager at Texas A&M-Corpus Christi, said. “When looking to add a new concept to The Cove, we wanted to have a new cuisine with exciting flavor profiles and high satisfaction ratings. We also wanted a portable and customizable option so our guests could build their-own based on their appetites and diet.”
Copperhead Jack’s can accommodate diets including gluten-free, vegetarian, vegan, and more. The restaurant features South Texas favorites like pork carnitas, picadillo, churros, and popular Mexican sodas. The always fresh, never frozen ingredients create what Susan Layton, University Services Director, calls a “Tex-Mex to Fresh-Mex” experience.
“I’m from near the Texas-Mexico border, so it’s nice to have a place close by that gives the taste of home,” Victor Ochoa, Islander music major, said. “I remember going into an interview with Chartwells, and they asked us what we wanted to see, I’m glad to know they’re listening to the students and making the changes.”
Copperhead Jack’s is just one of three tasty new options added to The Cove. Others include the expansion of Chick-Fil-A to a full-service menu, and Sushic, which will bring Asian-fusion cuisine including sushi, in spring 2021.
“I’m really excited about all the new places coming to the Cove,” Alyssa Encinia, first-year psychology major, said. “I honestly never even imagined being able to have all of these options, so as a new Islander, it’s really nice for me. I love the fact that with this new place we have the freedom to customize what we eat.”
